Irpinia Greco sparkling wine D.O.C. of Tenuta del Meriggio

Classificazione: White sparkling wine

The grapes used to make this product are harvested after a careful check of acidity and sugar content, usually in the first half of September.
The yield in must is about 50% in order to preserve the PH and acidity with optimal values and at the same time avoid the passage in the must of excessive quantities of polyphenols. The must obtained in this way is fermented at a controlled temperature and at the end of fermentation after a suitable clarification and filtration it is transferred to autoclave where it is refermented and aged on yeasts for about six months before being bottled.
This sparkling wine is entirely produced and bottled in the company.

ORIGIN OF THE GRAPES AND CHARACTERISTICS OF THE VINEYARDS: Grapes produced from the vineyards of San Paolo in Tufo (AV), 400m above sea level.

SOIL TYPE: clayey soil rich in skeleton

PLANTING YEAR: 10 to 20 years old

VINEYARD TRAINING SYSTEM: Rays and espalier

PLANTING / YEALD PER HECTARE: 100 quintals

HARVEST SEASON: First half of September

PAIRINGS: excellent for aperitifs accompanied by land and sea hors d’oeuvres not very spicy, sweet and savoury appetizers, iced or fruit-based desserts, milk chocolate, lean white meats, panettone and pandoro.
